You can set up a rule in Mail/Preferences/Rules or on the e-mail providers web site.
If you are using POP or IMAP accounts, like / account or configuring via POP/IMAP then this will not work for you. The Out of Office menu item is only for use with Exchange accounts, like Office 365 for Business accounts.
